Avocado mousse

Meat-free. Gluten-free. Egg-free. Nut-free. Sugar-free¹.

1 ripe avocado pear

1 tblsp lemon juice

½ tblsp olive oil

75 ml (2½ fl oz, 1/3 US cup) double cream

small pinch of sugar (optional)

salt and pepper

Cut avocado in half, remove stone and scoop out flesh. Blend with lemon juice.

Stir in olive oil and cream gradually, beating to mix well.

Pile back into the avocado shells, garnish with parsley and serve chilled.

Notes:

1. (omit sugar)
