a whole salmon, about 1.5-2kg (3-4 lbs), cleaned, head and tail intact juice of 1 lemon Salt and pepper
Preheat the oven to 180ºC (350ºF, gas mark 4).
Sprinkle the cavity of the salmon with salt, pepper and lemon juice.
Wrap salmon in foil and bake for ¾-1 hour (about 30 minutes per kg or 15 minutes per pound). Serve with Bearnaise sauce and peas.
