250ml (8 fl oz, 1 US cup) water 110g (4 oz, ½US cup) butter 1 tblsp sugar ½ tsp salt 110g (4 oz, 1 US cup) plain flour 4 eggs 1 tsp grated lemon peel 1 tsp grated orange peel cream or non-dairy topping for filling
Preheat oven to 230ºC (450ºF, gas mark 8).
Mix water, butter, sugar and salt together in a saucepan and bring to the boil. Sift in the flour, stirring continuously until thoroughly mixed. Stir in eggs, lemon and orange peel.
Grease a baking sheet and drop spoonfuls of dough leaving room for expansion. Bake for about 20 minutes until golden brown.
Cool on a wire rack.
When completely cold, use an icing bag to fill with whipped cream or non-dairy topping.
