Mandarin fried rice

Gluten-free. Dairy-free. Nut-free.

3 eggs 
3 large cloves garlic 
1 large piece fresh ginger 
1 bunch spring onions
1 lapchang (Chinese sausage) or 4 rashers cooked bacon 
8 cups cold cooked long grain rice 
3 tblsp light soy sauce 
½ tsp white pepper 
salt 
oil to cook


It is recommended to use day-old rice so that the drier rice can soak up the flavours.

Peel and chop garlic and ginger finely. Chop white and green parts of the spring onions separately. Dice Chinese sausage or bacon.

Beat eggs and cook into an omelette. Remove and set aside. Stir-fry garlic and ginger, add white spring onions and lapchang or bacon. Add rice and mix thoroughly.

Add soy sauce, white pepper and chopped cooked eggs. Check and adjust seasoning. Serve immediately.
