Easter Monday is the day after Easter Day, and in many countries is a public holiday. It is a Bank Holiday in England and Wales, but not Scotland. It was once the beginning of a whole week of celebrations after Easter, when the austerity of Winter was over and the new Spring-time crops were starting to become available.
